Really though, it does make all the difference.  By all means, use canned tomatoes and dried herbs if that is all that you have available.  You can get away with using tinned tomatoes for bolognese recipes but with this Tomato Rigatoni, the focus is all on the tomatoes.

This easy vegan recipe for Rigatoni Arrabbiata also makes a tasty vegetarian meal if you are not quite vegan.  Just swap the vegan cheese for parmesan.  Because this delicious vegan recipe is so quick and easy to make it would be perfect for a weeknight dinner.

NOTES ON MAKING RIGATONI ARRABBIATA Use fresh Tomatoes – I diced my tomatoes so that they would cook quickly and used a potato masher to make them liquified.Chop your Fresh garlic really finely.  – Chop the garlic so small it looks like it’s been minced.  – No one likes crunching on a chunk of garlic.Don’t rinse the pasta.  Once you have drained your pasta, simply pour it back into the saucepan. Pasta should never, ever be rinsed for a warm dish. The starch in the water is what helps the sauce adhere to your pasta. The only time you should ever rinse your pasta is when you are going to use it in a cold dish like a pasta salad or when you are not going to use it immediately.

This delicious vegan pasta recipe is all about the sauce and using fresh, tasty healthy ingredients.  Here is what you will need to make this tasty authentic Italian pasta dish;

Garlic – Fresh garlic works the best.  Make sure you chop it really fine.Olive Oil – Extra VirginFresh Tomatoes – Roma Vine tomatoes are the tastiest.  Make sure that you choose tomatoes that are perfectly ripe.  Not too soft and not too firm.  The tomato should be a deep red colour all over with no green or yellow bits.Fresh Herbs – I love adding fresh basil and parslet to my pasta dishes.Chilli Flakes – Again. from my garden.  You could use fresh chilli if you don’t have chilli flakesVegan Parmesan – I’m lucky enough to have this available where I live.  If you don’t have Vegan parmesan available at a store near you then use nutritional yeast instead.  Or normal parmesan if you are vegetarian.Salt, Pepper and Sugar – Used to season the sauce and pastaRigatoni Pasta – Large tube-shaped pasta which will soak up this tasty sauce. WHAT IS RIGATONI?

Rigatoni is a form of tube-shaped pasta of varying lengths and diameters originating in Italy. They are larger than penne and ziti, and sometimes slightly curved.

Rigatoni is made with semolina flour, traditionally and is cooked al dente to retain its durability. Because of its hearty shape and durable structure, it’s normally used for meat sauces or vegetable-based sauces with cream. It holds sauces well and doesn’t collapse like other shapes which makes it the perfect choice of pasta to hold on to the delicious rich flavour of the arrabbiata sauce.

Ingredients

1 Tbsp Olive oil

2 Cloves Garlic Finely Chopped

1 Tbsp Chilli Flakes (to taste)

350g Roma Tomatoes

Salt, Pepper, Sugar to taste

4 Serves of Rigatoni Pasta

Freshly chopped basil and parsley

Instructions Boil a salted pot of water and then add 4 serves of Rigatoni PastaHeat the oil in a skillett and sautee the garlic.Add the freshly chopped tomatoes, chilli flakes salt, pepper and sugar and stir.  Leave to simmer for 10 MinsMash the tomatoes with a potato masher. Place the lid over the saucepan and leave for a further 5-7 mins stirring occasionally.Drain the pasta and place back in the saucepan.  Stir in the freshly chopped herbs and pour your tomato sauce over the pasta.Serve with vegan parmesan, normal parmesan or nutritional yeast.
